For the longest time, I was the worst snacker ever. I would either overeat super unhealthy snacks in huge portions, or I wouldn’t have any at all.
I’ve realized that neither of these are ideal, so I have been prioritizing having a daily snack and keeping certain foods on hand so that I can function in between meals. There have been a few occasions where I was super hungry, didn’t have anything on hand for a quick lunch or snack, and I ended up feeling super cranky and tired. That’s definitely not fun, especially since I’m a full-time student and need to stay as productive as possible.
Packing quick snacks for school and always having some extra fruit in my fridge has done wonders for my energy levels. I used to rely on 3 big meals, but I have been enjoying smaller meals throughout the day lately, which has made me feel much better.
I know it can be a little more difficult for vegans to find healthy snacks….no offense to fruits and vegetables, while they’re delicious and a staple in our diet, sometimes we want something a bit more exciting. If this applies to you, look no further. I am happy to share my 4 favorite snacks that I have been enjoying for the last several weeks.
1. Peanut Butter Dates
I am obsessed! I could eat 20 of these in one sitting. All you do is remove the pit of a date and add a small spoonful of peanut butter into the center and you have yourself the most delicious snack that also makes an amazing dessert!
2. Pretzels with Dijon Mustard
Pretzel sticks are one of my favorite savory snacks. Add a vegan queso or mustard and I’m good to go! I love just grabbing a handful of pretzels sticks and some dijon mustard because it kinda reminds me of junk food, but it is a healthier snack than the majority of what you could find in a snack machine. Not exactly an apple, but better than Cheetos!
3. Chips and Guacamole
Who doesn’t love Guac? You’ve got to try my Garlic Lover’s Guacamole. I love my guac recipe with blue corn chips from Trader Joe’s. It’s like a mini fiesta, but not even close to a full meal.
4. Almond Date Balls
I discovered this flavor combo when I made my Raspberry Cheesecake Cups. If I want to have a quick snack to grab on the go, I make a batch of these balls. I use one cup of almonds and 17 medjool dates and blend them up in a food processor. These are so delicious and filling and are definitely my all-time favorite snack!
