It’s all you want, it’s the only food you think about, no other meal compares?
Well, I currently have a recipe that I just can’t get enough of, and it’s about time that I shared it with you.
Spicy sloppy joes. Must I say more? Well I will: they’re completely vegan, high in protein (for those of you who need a post-workout meal), and OMG delicious! Make them for a special occasion, dinner, lunch, it really doesn’t matter. These sloppy joes will be amazing regardless!
You want to know my favorite part of the recipe?
It takes only 20 minutes to make! Yes, this is one of the easiest and most delicious recipes on the blog.
Also, it makes 4-5 big sandwiches, meaning that you can easily feed multiple people, or can have some leftovers to enjoy throughout the week (these taste great even after a few days in the fridge.
This may not be the first sandwich on the blog. My Buffalo Jackfruit Sandwiches is one of my most popular recipes. However, I love these spicy sloppy joes even more! They’re easier to prepare, chickpeas and tempeh are more accessible than jackfruit, they taste even better….Needless to say, I am pretty proud of this one! I say this a lot, but I genuinely think these sloppy joes are some of the best and easiest recipes I’ve made to date. It’s a simple recipe, but I am slowly learning that less is more.

“All vegans eat is salad”
I guess I can’t speak for all vegans, but I seriously only have a salad maybe twice a month. Not saying I’m proud of that, but I do easily break the stereotype.
I’m really not a greens gal. I put spinach in my smoothies (like my Chocolate Cherry Green Smoothie and my Healthiest Smoothie on Earth), but that’s basically where I get the majority of my greens. If I make a salad, I have to really love it. It needs to meet my criteria: some form of hearty protein and a yummy dressing.
I am happy to say that this buffalo tempeh salad with hemp ranch is just that!
If you have seen my BBQ Chickpea Salad with Hemp Ranch, you might be wondering how this salad is much different. Isn’t the only difference the flavor and the protein? Yup. Sure is. What can I say, I have a type.
I promise I will make some different salads for all you greens lovers, but until then, I just have to share what I like. I only really share recipes that I would make myself (at least at the moment), and I can assure you that this is my salad of choice all the time, regardless of the time of year. Everyone likes buffalo-flavored anything, that’s just an unspoken fact. Everyone likes ranch…I think. If you are looking for a healthy vegan salad that incorporates flavors you love, this could very well be it for you!

I like being busy.
After a few years of what seems like a blur consisting of schoolwork, work, and more work, I finally like being busy.
Sure, it gets stressful. Yeah, I sometimes just want to rage quit life. Ok, I do want to just sleep in or watch tv all night.
My boyfriend’s favorite food is fried rice. It has been for years.
Before we were vegan, we would get chicken fried rice all the time (I know, it makes me sad as well).
Fortunately, it is very easy to make vegan fried rice. I make a meat and egg replacement out of tofu, and it never disappoints. After playing around with this recipe for awhile, I am finally ready to share it with you.
I swear chili is thee most universal dish out there.
I mean, everyone loves chili, right?
Just about everyone grew up eating a chili recipe of some form….right?
Well, I can say that I absolutely love chili. I make it a few times per month during the cooler months. It is so warm, filling, yummy, and in this case, spicy.
I try lots of different chili recipes, and I think they are all delicious. However, I wanted to create a chili recipe that is super spicy because well, I like anything spicy.
I need to warn you: if you follow my recipe 100% with the highest amounts of sriracha, chili powder, and cayenne pepper, the chili is HOT. All my spicy-lovers will love this dish, but if you have a low tolerance to spicy foods or just do not like them, just use less of the spicy ingredients or omit them.
Make a big pot of this spicy chili, add some nutritional yeast, maybe some sour cream or avocado. Enjoy a big bowl and try not to burn your tongue with all the spices. That’s been my January routine. 2017 is looking better than ever!

We have made it to the end of the year, and I must say, as weird of a year 2016 was, it sure did bring some delicious food! I founded the blog in 2016, and while I did not blog for the entire year, I do have some pretty cool recipes to share.
For my Top 16, I am going with popularity. I want to share the posts that you-my readers enjoyed the most!
Some of my favorite recipes made the cut, as well as some surprises. Seeing what you all enjoy gives me a great idea of what you might like to see in the future.

No contest. This buffalo cauliflower wing burger was by far the favorite of the year! I am so happy about how enthusiastic people were over my favorite summer burger! Who doesn’t love a good veggie burger? Add cauliflower wings and…..I’m not surprised this was a favorite.
I was surprised by how well received this recipe was. I thought it was a bit risky since it’s one of those love-it-or-hate-it type of ideas. Still, I would say that overall, you all liked this recipe and it makes an awesome lunch-especially in the spring or summer.
I was very surprised by how popular this recipe quickly became. I am not surprised that people like it because it is probably the most delicious recipe I have ever created. Still, I wasn’t sure if this peanut butter and banana pizza was anything new or exciting, but fortunately, people love it! I hear it’s been making its way around Tumblr, so thank you all for sharing and for your enthusiasm!
My first recipe on the blog, and probably one of my best. I was so excited to create this recipe and bring it to life. I am still so proud of this amazing smoothie. If you have not tried it, I highly recommend it. It seriously tastes like the real thing!
This is the recipe that all fellow health nuts loved! There is nothing more useful than a reset button, and this smoothie can do just that! Filled with dozens of the healthiest ingredients, while I cannot confirm that this is actually the healthiest smoothie on earth, it could totally be a top contender.
I am only semi-ashamed to admit that this is the only salad recipe on the blog to date. I will definitely change that in 2017, but until then, we can go crazy over this delicious BBQ chickpea salad with homemade vegan ranch. I can’t say that this is my favorite recipe I have shared all year, but I can say with confidence that of all my photo shoots, this one is by far my favorite and what I consider as some of my best work (coming from a novice).
This has to be one of my favorites, and mainly because I’ve been working on it for almost a year now. Every vegan needs a good mac n cheese recipe, and this is one of the best (I promise I am only a little bit biased)!
I made this pudding on a whim after getting some fresh raspberries at a farmer’s market, and I was so pleased with the results! I’d say this is one of the best (and EASIEST!) desserts I created in 2016. Here’s to toping I can top it!
I know many people enjoy the guacamole bacon burger at Red Robin, and I wanted to create a healthy, vegan version. I think that this turned out even better than the original! Made with my addicting garlic guacamole, I practically swallowed this burger whole when I first tried it.
My burger recipes were a hit in 2016, and I have no complaints about that! My sriracha peanut burger was something I had in my head awhile back, and I love how they turned out! Without a doubt, the patty is the most unique out of all my burgers in 2016, and it’s inspired me to continue testing new veggie burger recipes.
Everyone loves peanut butter cups, and everyone loves chocolate pretzels. Keeping this in mind, I put the two together as my Halloween candy recipe. These were fun to test, but I can’t say they lasted in my apartment for very long (can you blame us?).
One of my early posts, and one of my favorites. I make this smoothie on a weekly basis, and if you haven’t tried it yet, I highly recommend it for a delicious and healthy breakfast.
I loved my 13 Blogs of Halloween series, and it brought many new recipes, including this pumpkin pie smoothie bowl. This could not have been a more simple recipe, and I like showing that popular Summer meals (smoothies and smoothie bowls, for example) can be adapted and enjoyed in the fall.
I was almost hesitant to post this recipe because it is almost too simple. I made date caramel and spread it over apples and here you go: healthy, vegan caramel apples. I am surprised that so many enjoyed them. It is a good reminder that sometimes simple can be better!
This recipe brought a sentimental story that ended up being very impactful in my life. I wanted to create nice cream and make it even healthier. Using spirulina, cacao powder, and real mint leaves, I consider this nice cream recipe to be easy, perfect for the warmer months, and super healthy (see what I did there?).
I love this recipe because it works any time of the year. I can have this for breakfast in April, July, or January (though it may be a bit cold for that). I think this recipe is really easy and tastes amazing. I am not surprised to see that people like it due to how simple it really is.
2016 was a fun year and I love all the recipes I made for the blog. I am hoping for even better in 2017: better recipes, better photos, better posts, better everything! I have learned so much and I plan on making 2017 a great one! Hope you stick with me!

Anything tastes good between toasted tortillas. Veggies are no exception.
These veggie quesadillas have been the answer to my health crisis lately.
What’s the crisis? Well, ok..it’s not really a crisis.
Honestly, I’ve just felt a little out of it when it comes to being healthy and exercising. I’ve been so busy with school, I just recently moved, and it’s easy to get distracted and ignore eating habits.
Now, don’t get me wrong. I’m still eating ok and I do exercise kinda regularly. However, I just feel like I am not doing my best. I could eat so much cleaner and could work so much harder at the gym. I even feel a bit out of it with yoga, which makes me super sad. My practice has been consistent, but not as strong as it was over the Summer.
I’m sure I’m going through something super normal. We all have moments where we plateau, we fall off track, we don’t think we’re doing our best. This is ok. I can get through it.
The worst part is that we are approaching the holiday season, and trust me, I don’t use that as an excuse to get off track. I will even have a post on staying healthy during the holidays coming in the next week. However, I do know that I will indulge, and I won’t feel bad about it. There is nothing wrong with cheat days, but there does come a time where it seems like cheat days are regular days. Where rest days become the norm. I don’t want it to be that way forever, so it won’t be.
I will share lots of desserts in the month of December, and after that, I will devote January to mainly health tips, clean recipes, maybe some advice on transitioning to vegan since that’s a common New Year’s Resolution.
Until then, I want to make the most of December and balance the healthy foods with the not-so-healthy food. I also want to maintain a workout routine, because I tend to get lazy towards the end of the year. For every unhealthy meal I eat, I will eat something super clean. Last year, I tried a 25 Days of Fitness, and only lasted about 17 days or so. I want to get through it this month. Plus, I need to make more yoga goals. I also want to get back into the studio because I’ve mostly only practiced at home. School will be over in a couple weeks. I will have about three weeks to take classes before Winter Quarter.
All this motivation to be healthier has me craving veggie quesadillas.
These are ridiculously easy to make, and are so quick and customizable.
I like mushroom, avocado, and green bell pepper. For flavor, I like hummus and sriracha….yum.
If you prefer any other veggies or flavors, feel free to mix it up. My veggie quesadillas will be delicious no matter what. Plus, you’ll feel amazing from all the amazing nutrients veggies have to offer!
I hope you do something today that makes you feel good, and is good for you. Drink a green smoothie. Go for a walk. Do a quick vinyasa sequence. Try my veggie quesadillas. You won’t regret doing something good for yourself.
My burgers have been some of my most popular recipes. First, there was the Buffalo Cauliflower Wing Burger. Then came the Guacamole Bacon Burger. Let’s not forget the Sriracha Peanut Burger. Well, I’ve got a 4th burger for you all: the vegan mac n cheese burger!
I’ve got to say, this might be one of my favorites so far. Nah, that’s not true. They’re all my favorites! Still, this burger is special to me. It’s probably not for everyone, but it tastes surprisingly amazing!
This burger is different in the fact that I use a store bought veggie burger.
WHAT??? This is a healthy vegan blog. How in my right mine could I use mock meat?
Well, here’s why: I think that it tastes best with this particular recipe.
I tested 3-4 burger recipes, and none of them were working. Matthew had the idea to use a Beyond Meat patty, and I tried that and loved it.
My mac n cheese recipe is completely homemade, but the burger isn’t. Honestly, I am ok with that.
This burger recipe took half the time that my other recipes take. Plus, it tastes amazing! It tastes so real to me!
Going back to mock meat: some bloggers use it. Some don’t. That is completely fine. Personally, I try not to use it all the time. I prefer to be a bit more creative and try to think of ways to make everything homemade. I am not perfect at this, but I do make an effort. It’s fun to get creative and have a staple recipe for everything. However, I never make my blog a processed food-free zone. Every now and then, I rely on mock meat because it 1. usually tastes good and 2. As of now, I can’t make something better (but I always try to keep testing).
Mock meat isn’t the worst thing in the world. No, I will not use it all the time in my recipes. However, sometimes, it just works. If you have a homemade recipe you’d rather use, you always can. If you don’t mind using some mock meat, I highly recommend it for this particular recipe. I love the Beyond Meat brand. It has great flavor, and combined with mac n cheese, tastes absolutely irresistible. Hello, game day!
