If you’ve never tried avocado pudding, you just have to trust me.
Avocados make the most dreamy texture that is perfect for pudding. I was skeptical at first as well, but one bite made me a believer. Since then, avocado pudding has been a go-to sweet indulgence for me. Honestly, it tastes about a million times better than any other pudding I have had before. Annnddd, get this: It’s actually pretty healthy, or at least my recipe is!
You know what’s better than fruit? Chocolate fruit! I don’t think I’ve ever had a fruit dipped in chocolate that I didn’t like. Though, I must say, chocolate covered watermelon doesn’t seem to appetizing.
Out of all the delicious chocolate-covered fruits out there, raspberries have always been one of my favorites! I remember when my mom would get me those Chocolate Raspberry chocolate bars that I would devour every Christmas. Chocolate raspberries bring back a lot of memories, which is I think why raspberries were the first thing that came to mind when I finally decided to customize my chocolate avocado pudding recipe.
This sweet treat is sweet for me not only because of the flavor, but also because it brings back amazing holiday memories with my family. I know how important and impactful food can be for many people, and how certain meals bring back memories and/or make us feel great. For that reason, I just had to share this.
Every recipe has a story, which I think is my favorite part about blogging thus far. I just love putting together recipes that mean something to me in some way. I can only hope that some of my recipes end up becoming part of someone else’s life in some way as well. This may sound sappy, but it would honestly make my life!
Unlike all of the non-vegan homemade puddings I have tried, avocado pudding is super quick to whip up! It’s the ultimate lazy treat. OK, it may not be lazy, but I find that many homemade desserts take a lot of time to prepare, and sometimes, you just want a quick, easy, treat that will satisfy any late-evening (or mid-morning….I won’t judge) cravings.
Personally, I don’t always plan on having dessert, but on those days where I am really craving something, avocado pudding is the way to go! Personally, I don’t taste the avocado in the slightest. Avocado is there solely for texture. Let the chocolate, raspberry, and sweetener do its job, and you have yourself an amazing, vegan dessert that looks extremely decadent and filled with refined sugar, when actually, it’s fairly dang healthy and is all-natural. A little high in fat, but at least it’s the good fat that has lots of other amazing nutrients to go with it! I always say that the big picture is much more important than singling out one nutrient or ingredient.
With all that said, I really hope you enjoy this creamy, sweet, and indulgent pudding that has made my life just a little bit happier recently. With how delicious and easy this recipe is, I have a feeling that it could bring in some happiness for you as well!
- 2 Medium Ripe Avocados (as ripe as possible)
- 1/2 Cup Fresh Raspberries
- 1/2 Cup Agave Nectar or Maple Syrup (or honey if not vegan)
- 1/2 Cup Cocoa Powder (can sub cacao or carob powder)
- 1 Tbsp Chia Seeds
- 1/2 Tsp Vanilla Extract
- 1. Add ingredients to a high-speed blender, and blend until smooth creamy, and somewhat thick. It may take a few minutes depending on power of your blender and ripeness of the avocado. You may need to stir mixture in between blending.
- 2. After the mixture is fully blended, place pudding into one medium bowl or 2-3 small bowls and refrigerate for about 10 minutes.
- Best if served immediately, but can be stored in fridge in an airtight container for no more than 48 hours.
- You can sub raspberries for other fruits such as strawberries, blueberries, cherries, etc.
