Blog Fact: My first post was a smoothie. My lemon meringue pie smoothie is still one of my favorites.
Since then, smoothies have been regular part of the blog. I know not everyone loves smoothies, particularly because yes, it is better to eat food in solid form for satiation. However, I figure that it’s better to eat healthy somehow, and if smoothies help you to get some extra servings of healthy ingredients, then by all means, keep them in your diet!
I can promise you one thing: once you try my coconut raspberry shake, you will want to drink it nearly everyday! At least, that’s what I’ve been craving!
The inspiration for this recipe came from a visit to Las Vegas last year. There’s this place called Holstein’s at the Cosmopolitan Hotel. It is decorated with pictures of cows and serves some of the most horrifying burgers and shakes on this planet (that I admittedly would have loved before veganism). Also on their menu: a vegan burger and a vegan milkshake. The vegan coconut raspberry shake is amazing. I absolutely love that there are so many vegan-friendly places in Las Vegas, but I don’t like that I live so far. When I am looking for a worthy (and healthier) replacement, I make this coconut raspberry shake. It is not nearly as unhealthy as the original, but tastes similar and satisfies my sweet tooth.
If you’re looking for something sweet that isn’t chocolate, look no further! I think you will love this delicious and easy shake! Sometimes, you can have a treat without having to run a marathon to burn it off! I like those kinds of treats.
- One Cup Almond Milk
- 1 Frozen Banana
- 1/2 Cup Frozen Raspberries
- 1 Tbsp Unsweetened Coconut Flakes
- 2 Tbsp Coconut Cream (homemade or store bought)
- 1 Tbsp Chia Seeds
- 1 Tsp Liquid Sweetener (I used Agave)
- Add all ingredients to a high speed blender and blend until smooth. Add more almond milk to ease blending if necessary.
- Pour into a glass and serve immediately.
