“Do you miss meat?”
-Probably the most asked question I receive as a vegan.
My answer: no.
It may seem shocking, but the idea of harming an animal and the environment for my taste buds does not seem appealing to me in the slightest. Plus, I like vegan food. In fact, I love it.
I know this may be surprising for non-vegans. I get it. Our world is so dependent on animal products, so I understand that the idea of going without them seems impossible. I was once there as well. In fact, before I decided to go 100% vegan (in other words, once I fully educated myself), I planned on only being vegan 4-5 days per week so that I could have animal products sometimes. Needless to say, I changed my mind. Still, what I’m saying is that I know how hard it is to change habits.
The first month or so is difficult. I remember how lost Matthew and I were. It took constantly googling recipes and checking Pinterest, and we quickly realized that everything was going to be ok. Matthew doesn’t have to eat salad everyday. I can find substitutions for all my favorite foods. Our diet was initially heavy in processed foods, but that changed once we got the hang of cooking plant-based.
Today, I absolutely love being vegan. It makes me more excited for food than I ever have been. Eating out is so much fun. Cooking and baking has never been more inspiring. I know it sounds unbelievable to non-vegans, but my biggest regret is not going vegan sooner. The health benefits are so worth being somewhat inconvenienced in social situations. Plus, have I mentioned how amazing he food is?
Vegan food is amazing. Don’t believe me? I understand, but I urge you to keep an open mind! Try a vegan dish. I recommend my Peanut Soba Noodles with Sriracha Tofu, Buffalo Cauliflower Wing Burger, Chocolate Raspberry Avocado Pudding, Perfect Vegan Mac and Cheese, and Sriracha Peanut Burger. All are delicious.
Being vegan is awesome, and I am happy to say that I will never go back.
I have never cheated. I have accidentally eaten milk and egg products, but I learn and move on from mistakes.
You are welcome to think that I am crazy, but I am too busy enjoying my food and feeling better than ever to be bothered by it!
