I remember Shamrock Shakes being pretty delicious, but you know, full of dairy and sugar. My vegan shamrock shake is different.
I’m not too into McDonalds. In fact, I haven’t been in well over a year 1/2. Yeah, I liked the shakes, but it is still possible to enjoy a similar flavor without harming a cow or your health. This belief was reinforced when I tried a healthy vegan shamrock shake. There may be no vegan ice cream, but I don’t think it’s needed. You can enjoy a sweet and satisfying smoothie that reminds you of childhood while simultaneously making a healthier decision. It’s pretty awesome.
Another plus: this is probably the easiest recipe ever and needs only 6 ingredients: almond milk, bananas, spinach, sweetener, vanilla extract, a couple drops (and I mean A COUPLE DROPS) of peppermint extract. Seriously, don’t overdo it on the peppermint. Or else it’ll taste like a toothpaste-Christmas nightmare, and that doesn’t seem very happy or lucky (see what I did there).
Enjoy this smoothie as a healthy snack or treat. It could probably be a meal replacer, but since it only has about 300-350 calories, it would be a pretty small meal (at least for me), your call, though! I’ve been loving this smoothie if I want something in between meals. Usually, I have this on my super active/busy days when I need more food to get through it all. I did, however, have it for breakfast one day, and it did hold me through for awhile.

- 1.5 Cups Almond Milk
- 2 Frozen Bananas
- 1.5 Cup Spinach
- 1 Tsp Liquid Sweetener (such as agave or maple syrup)
- ½ Tsp Vanilla Extract
- 2 Drops Peppermint Extract
- Add ingredients to a high-speed blender and blend until smooth. 1.5 cups of almond milk should be enough, but if not, add more to ease blending.
