Hey, you made it! The first month of the year is over, and chances are, you are either on track with your goals, or wishing you could restart the whole year. Wherever you are, remember that one month is just that, a month. Does it matter in the long run? It can. Will it make or break your entire life? Probably not. I know that I made some great decisions and some were not so great, but I am looking forward to looking ahead and embracing the year as a whole!
Despite my eagerness to move forward, I’m not quite ready to let go of January just yet. First, I want to recap everything that happened on the blog, along with stuff going on in my life. I see other blogs doing this, and I personally enjoy reading them. It’s cool to get an overview of content, alone with some personal favorites and ventures. January was a crazy month for me. I’ve been getting the hang of a busy school schedule, and had to postpone some posts to February because of that. Still, I did manage to make several recipes that I really love! I shared lots of recipes that I make all the time at home. I hope you enjoyed them!
My Life in January:
School, school, school, more school. I spent 8 hours on campus two days per week. Then, I have one day where I go to school-related meetings. I am also volunteering at a mental health unit at a hospital and at a juvenile detention center. I absolutely love getting experience outside of the classroom! Though, the classroom hasn’t been to bad, either! I am taking a course in the psychology of food and culture, which has been so fascinating! Also, I am taking a sexual deviance course (interesting, but much more visual than I was expecting), and a class in masculinities for my gender studies minor.
Every day there is something going on. I do not get a lot of free time, but I did manage to attend the Women’s March in Olympia, Washington, and unite with 10,000 other people at my state capital! It was a beautiful experience, and was about SO much more than women’s issues. I felt so connected to my fellow Americans.

This, along with my Breakfast Club sandwich (vegan french toast, ham, egg, cheese, and bacon….um, yes) can be found at the Wayward Vegan Cafe in Seattle. Matthew and I are going to start going every couple months because well, the addiction is real.

This is insane, but I’ve been rewatching Glee on Netflix. Not sure why, but it takes me back to my High School music days.

What February has in store:
Real Life: More school, Superbowl (even though the Hawks won’t be there), I will be going to Portland for Valentine’s Day weekend (possible post on all the vegan places I visit!), more volunteer work, and I plan on really keeping up with the gym and my yoga practice, but I won’t annoy you with gym selfies….maybe just a monthly yoga update?
The Blog: Stay tuned for healthy vegan breakfasts (sweet AND savory), super meaty recipes (but you know, without the meat), and lots of healthy recipes that I think you’ll love. I am still finishing up some testing on a couple recipes, but I can tell you that what I have ready is super amazing and will make a vegan lifestyle seem possible. Yeah, I’m that confident. Also, look forward to me venting about vegans (whatttttt?), my issues with the diet industry, and more about why I am vegan. I’ve got everything and more planned for February, it will all be delivered to you with love.
