Sometimes food brings back memories.
Gingerbread reminds me of Christmas. Fruit salad reminds me of Thanksgiving. Nacho dip reminds me of football. The list goes on and on.
Mint chocolate chip ice cream has a story behind it.
My grandparents live a block away from the ocean. They have a cute little beach home and they have lived there for most of my life. I visit them a few times per year since they live about 4 hours away.
Ever since childhood, I remember walking to an ice cream shop that is right next to the ocean. I would always get mint chocolate chip, which was my favor flavor as a kid. A mint chocolate chip ice cream cone at the ocean while visiting my sweet grandparents will always hold a special place in my heart. Especially as my grandparents are getting older.
Since I unfortunately can’t see my grandma and grandpa every day, sometimes, I want to be closer to them, and making this mint chocolate chip superfood nice cream has been my way of remembering all of the great times at the ocean. Not only is it a super healthy and delicious breakfast, it makes me feel happy as I remember so many happy times as a kid. I may not eat dairy anymore, but I will always have fond memories of mint chocolate chip ice cream, dairy or not (even though I won’t go near the dairy ice cream anymore).
Even though this isn’t the exact ice cream I had as a kid, I still love this much healthier and 100% clean nice cream. I have shared other nice cream in the past (Snickers Nice Cream and chocolate peanut butter, both YUM!), but this one is definitely the healthiest and packed with super foods and ingredients that your body will love.
I just love how dessert can be healthy….super healthy at that!

- 2 Frozen Bananas
- 1-2 Tbsp Mint Leaves
- 1/2 Tsp Spirulina Powder
- 2 tbsp Cacao Nibs
- 2 Frozen Bananas
- 1 Tbsp Cocoa or Cacao Powder
- In a food processor, add mint nice cream ingredients and pulse until smooth. Pour into bowl and stir in cacao nibs. Place in freezer.
- Place chocolate nice cream ingredients into food processor and blend until smooth.
- Combine chocolate and mint nice cream layers into one bowl and serve immediately or keep in freezer for up to 20 minutes
