I can’t believe it took 21 days into October for me to finally post a pumpkin recipe!
Well, I guess I just thought that there are already plenty of pumpkin stuff on the internet. Do we really need or want one more?
But then I realized, people go crazy over pumpkin for 2 months out of the year. There are plenty of people out there who would gladly take any pumpkin recipe I throw at them, so why not bring people what they want?
Well, here it is: My Pumpkin Pie Smoothie Bowl.
Why didn’t I go with some form of pumpkin dessert? Well, I don’t personally think I could create a pumpkin pie recipe that amazes me, but I do know how to make a good smoothie bowl. I decided to stick to what I know.

I got it right the first try when I blended it up one morning. That doesn’t always happen, but I knew this was too good not to share. All you pumpkin-lovers and pumpkin-neutrals alike will surely love this filling and satisfying breakfast! Ok, I actually always liked pumpkin spice, I just never go crazy over it. I definitely get the hype, though!
I hope you love my first pumpkin spice recipe of the season. If you are looking for something light and satisfying, but also festive, look no further! This smoothie bowl is a winner and makes me feel a little bit more excited for the day when I’m getting up at the crack of dawn.
- 1/2 cup almond milk
- 2 bananas
- 1/2 cup pumpkin puree
- 2 medjool dates
- 1/4 cup oats
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
- 1 tsp maple syrup
- Add ingredients to a high-speed blender and blend until smooth and there are minimal chunks, about 1-2 minutes depending on power of blender.
- Pour into bowl and add desired toppings. I like pecans, chopped dates, chia seeds, and coconut cream. Best if served immediately
